I love baking for my family – it’s a busy house, where we live, so baking does help me relax and unwind. Especially since I know that the food – blueberry oat cheesecake in this case – I’m preparing will bring a smile on my little babies’ faces.
However, I do tend to not use sugar too much in our diets, so this recipe came like a blessing to me. It’s not sugar-free, but the total amount of sugar is still neglectable, especially when it comes to a big Sunday family dinner.
The preparation is super easy, and the kiddos will love it – I promise!

Dough
3/4 cup flour
1/2 teaspoon of baking powder
1/3 cup sugar
1 pack of vanilla sugar
pinch of salt
1 egg
1/3 cup butter
Filling
4 1/2 cups of low-fat cream cheese
3/4 cups sugar
1 lemon
1/2 cup cornstarch
3 egg yolks
3 egg whites
7 oz liquid cream
Crumbs
1 cup flour
1/3 cup sugar
1 pack of vanilla sugar
1/3 cup butter
Preparation
Step #1
Mix the flour with the baking powder. After mixing those two evenly, add the rest of the dough ingredients. Mix them all in until it becomes a regular dough. Wrap it up in foil and let it rest for 30 minutes in a cold place.
Step #2
Place the dough on the bottom of your cake pan, and spread it out evenly. Poke the dough with a fork across the entire pan. Bake for 10 minutes at 390°.

For the filling, mix the cream cheese, sugar, cornstarch and the egg yolks. On the side, whip egg whites until stiff. Separately, whip the cream until stiff. Take both egg white and cream mixtures and join them together with the cheese. Spread the joint mixture on the half-baked dough evenly.

For the crumbs, take the flour and add sugar and butter. With a hand blender mix all the ingredients in until crumbs are formed. Spread them out onto the filling evently, and bake for 70-80 minutes at 350°.
Step #5
Leave the cake in the oven for another 15 minutes after it’s done baking. Make sure to leave the oven door open.
